Goji Berry Nut Bar with Elderberry Dark Chocolate Glaze

INGREDIENTS

• 1 cup oats

• 1 cup almonds

• 1 cup walnuts (or hazelnuts, cashews, or nut of choice)

• 1 cup goji berries

• 1/2 cup shredded coconut

• 1/2 cup pumpkin seeds

• 1/2 cup dates

• 3 tbsp coconut oil melted

• 1 tbsp pure maple syrup

• 1 tsp coconut oil extra, for topping

• 2 squares dark chocolate for topping

   • 2 Tbs Elderberry Concentrate 

INSTRUCTIONS

1. Reserve a 1/2 tbsp of the goji berries and pumpkin seeds to sprinkle on top.

2. Add all ingredients (except for the extra 1 tsp coconut oil and dark chocolate squares) to blender, and whiz until all chopped up but not too blitzed, you still want some texture.

3. Spread mix into a slice tin and flatten down with the back of a metal spoon until flat and smooth.

4. Sprinkle the remaining goji berries and pumpkin seeds on top and smooth it all over with the back of a metal spoon. Push down into the slice a little to keep the slice in place and then place in freezer.

5. Melt the coconut oil and dark chocolate in a double boiler, whisk in the elderberry concentrate, then use a spoon to drizzle the melted chocolate over the spread.

6. Slice into squares. Store in the freezer and eat straight from there.
